A lovely Saffa (South African) friend of mine, who lives in England, shared this gorgeous recipe with me and I made it this afternoon. We had it tonight after dinner and it was scrumptious! If you feel like trying it, here is the recipe:
Brandy Tart (tipsy tart)
1 teaspoon bicarb soda
1 cup boiling water
1/2 cup butter or marg
1 cup of sugar
2 cups of flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup of walnuts
Cut dates into small pieces. Add the bicarb and the boiling water to half of the dates in a small container, stir, and allow to cool.
Beat the butter/marg and sugar together till creamy and add the beaten eggs to mix. Mix well.
Sieve all the dry ingredients and fold into the creamed mixture
Add dry dates and nuts and then add the dates and bicarb mix into the batter.
Put mixture into a big oven proof dish or two tart dishes of 22 cm.
Bake 30 to 40 minutes on gas mark 4 or 180c.
1 1/4 cup of sugar
1 tablespoon butter
3/4 cup of water
1 teaspoon vanilla
a pinch of salt
1/2 cup of brandy
Boil the first three ingredients together for 5 minutes
remove from heat and add vanilla, salt and brandy. Stir well.
Drizzle this over the hot tart when taking out of oven.
Dish up hot or cold with cream or ice cream.
