Delicious and simple to prepare!
All you need is 2 slices of pizza bruschettina, 2 chicken fillets, breadcrumbs mixed with a little Cajun seasoning, 1 egg – lightly whisked, some baby spinach leaves, a julienne mixture of vegetables and light whole egg mayonnaise mixed with a little Cajun seasoning.
Now, to throw it all together… Simple; dip chicken fillets in egg, then in breadcrumb mixture and place on foil on a cooking tray. Cook at 230°C for 15 minutes. The pizza bruschettinas need to be baked for about 3 minutes; do this near the end of cooking the chicken. When both are done, spread mayonnaise mixture on both bruschetinnas, place baby spinach on one, then the chicken, and the vegetables mixture and place the second bruschetinna on top of that and violá!
